I don’t want to sound like I’m blowing my own trumpet but these pancakes are literally going to make your day, trust me!! They were so simple to make and not that bad ‘health wise’ for you really! I can’t deny that for some reason I can never get pancakes cooked just right, I always end up burning them a little on one side, but nevertheless, they still tasted AMAZING! So, I know you’re probably thinking ‘just get on with it!’ so I won’t hang around I’ll get straight to the good stuff!
Get yourself some form of bowl or jug to mix all the ingredients. All you will need is:
1 ripe banana (mashed)
1 tsp cinnamon (to taste)
1/4 tsp baking powder
1 tsp vanilla essence
Handful of blueberries (I used frozen)
Simply mix this all together then cook in a pan, I would love to suggest to you how to cook them but as I said, they never quite cook as I’d like! In total, the above recipe made 3 medium-sized pancakes (the last one went very messy hence why it’s not in the photo!) but you can always make a few smaller ones if you preferred! They have a lovely gooeyness to them from the blueberries and depending on what toppings you add, I, of course, went for sweetness, it really does fix your sweet tooth, especially if you have a big one like me! These would be great for breakfast or lunch like I had them, they definitely fill you up that’s for sure!! I like to think American blueberry pancakes are the best, so this is my ‘healthier’ version!
